EGGLESS OMELETTE

  • Gram flour (Kadalamaavu) : 3/4 cup
  • Finely chopped leaf vegetable(spinach, Drumstick leaves, etc) : 1/2 cup
  • Cumin seeds : 1/2 teaspoon
  • Turmeric : 1/2 teaspoon
  • Black pepper : 1/2 teaspoon
  • Green chilli, finely chopped : 2
  • Tomato, finely chopped : 1/2 cup
  • Capsicum, finely chopped : 1/2 cup
  • Water - to make the batter : 1/2 cup
  • Coconut oil. : 2 tablespoons
  • Salt : 1/2 teaspoon

Mix all the dry ingredients together: gram flour, cumin seeds, black pepper and salt.
Add the water slowly to make a smooth batter, the consistency of Dosa batter.
Add the green chillies, tomato, spinach, and bell pepper. Mix well.
Heat a non-stick pan on medium flame.
Once the pan is hot enough, Pour approx. 1/2cup of the batter mixture into the pan and spread evenly with the back of a spoon like making a dosa.
When the batter starts to dry, gently spread about two teaspoons of oil over it.
Wait about 30 seconds; flip the omelette using a flat spatula.
Press the omelette lightly all around with the spatula to make the omelette cook evenly. Flip the omelette three or four times, until the colour changes to golden brown on both sides.
Repeat for the remaining batter.
