CREAMY RICE PUDDING

Basmati Rice

Milk

3 Cups (divided into 2 cup+1 cup)

Beaten Egg

  • Basmati Rice : 1 cup
  • Milk : 3 Cups (divided into 2 cup+1 cup)
  • Sugar : 1 Cup or To taste
  • Beaten Egg : 1
  • Golden Raisins (or of your choice) : 1 cup
  • Butter : 1 tablespoon
  • Vanilla extract : 1/2 Teaspoon
  • Cooking the Rice: Boil 2 cups water to a boil and stir the rice. Cover the pan and let the rice simmer for 20 minutes .

  • Pudding: Mix cooked rice, 2 cups milk, sugar and salt.

  • Cook on  medium heat till thick and creamy.

  • It may take 15 to 20 minutes.

  • Stir in remaining 1 cup milk, beaten egg and raisins and cook  for a couple of minutes more, stirring constantly.

  • Remove from heat and stir-in Butter and Vanilla.

  • Chill in the refrigerator.
